Ingredients

  • Textured Vegetable Protein: 1 cup

  • Basmati Rice: 1/2 cup

  • Pinto Beans: 15 oz can

  • Cabbage: 1 cup, chopped

  • Onion: 1 medium, sliced

  • Salsa: 7 tbsp (1 tbsp per wrap)

  • Wraps

  • Water: 1 cup + 1/2 cup

  • Olive oil: 1 tsp

  • Liquid Smoke: 1/4 tsp

  • Smoked Paprika: 2 tsp

  • Chili Powder: 2 tsp

  • Cayenne: 1/2 tsp

  • Cumin: 2 tsp

  • Dried Rosemary: 1/2 tsp

  • Black Pepper: 1/2 tsp

  • Salt: 1 tsp + more to taste

Instructions

  1. Start by cooking the rice.

  2. Place your beans, along with 1 cup water, 1 tsp of smoked paprika, 1 tsp of chili powder, 1 tsp of cumin and 1/2 tsp of salt into a small saucepan on medium-high heat.

  3. Once the bean mixture begins to boil, mash about half of the beans and leave the other half whole. Cook until at least half of the water has evaporated.

  4. Hydrate your TVP with 1/2 cup water, and add in your liquid smoke, 1 tsp of smoked paprika, 1 tsp of chili powder, cayenne, 1 tsp of cumin, rosemary, black pepper and 1/2 tsp of salt.

  5. Saute the onion with olive oil on medium heat. Once translucent, add in your TVP and still to combine. Saute for a few more minutes. If it begins sticking to the pan, add a little more water to deglaze.

  6. In the meantime, chop your cabbage. Add some salt to taste.

  7. Assemble your burritos by placing rice, beans, TVP mixture, cabbage and salsa into a wrap! Top with your favourite hot sauce and enjoy!
