Apple Cranberry Oatmeal Cookies
Packed with wholesome oats, fresh apples and tart cranberries, these cookies are a healthy alternative that are incredibly easy to bake.

Ingredients
Quick Oats: 2 1/2 cups
Apples: 5 small or 3 large, shredded
Cranberries: 1 cup, whole
Cane Sugar: 2 tbsp
Honey: 2 tbsp
Orange Juice: 1/3 cup
Cinnamon: 2 tsp
Pure Vanilla Extract: 1 tsp
Lemon Zest: 1 tbsp
Baking Powder: 2 tsp
Baking Soda: 1/2 tsp
Salt: a pinch
Instructions
In a large mixing bowl, add the dry ingredients. Stir until combined.
Add in your honey, vanilla extract, lemon zest, shredded apples and cranberries. Stir a few times, and then add in your orange juice. Stir again, but careful not to overmix.
Line a baking sheet with parchment paper, and form small balls of your cookie mixture.
Bake for 350 for about 15-18 minutes.
Place on a cooling rack, let sit for about 5-10 minutes, then enjoy!
Honey can be subbed out for maple or agave syrup.
I like to keep the skin on the apples, but feel free to peel them before shredding!
My recipes are never super sweet, as I prefer a healthier alternative, but feel free to add more cane sugar to your liking.
