Cozy Carrot Soup

Warm up your autumn evenings with this cozy soup. Crafted from fresh carrots, sweet potatoes, and a blend of aromatic herbs and spices, this easy-to-make, budget-friendly delight is not only a healthy choice but also the perfect comfort food for fall.

Ingredients

  • Carrots: 4 large, chopped

  • Sweet Potato: 1 large, chopped

  • Onion: 1 medium, chopped

  • Garlic: 1 large, 2 small cloves

  • Oat milk: 4 cups

  • Vegetable Bouillon Cube

  • Water: 4 cups

  • Dried Thyme: 1 tsp

  • Smoked Paprika: 1 tsp

  • Dried Rosemary: 1 tsp

  • Dried Sage: 1 tsp

  • Cayenne Pepper: 1/2 tsp

  • Cumin: 1/2 tsp

  • Black Pepper: 1/2 tsp

  • Curry Powder: 1/4 tsp (optional)

  • Olive oil: 1 tsp

  • Lemon Juice: to taste (I used about 1 tsp)

  • Salt & Pepper: to taste

Instructions

  1. Start by chopping your onion, carrots and sweet potato. Place on a lined baking sheet, and add your olive oil, thyme, smoked paprika, rosemary, sage, along with your garlic. Add some salt and pepper, and toss to combine.

  2. Place in the oven at 375, and roast for 45 minutes.

  3. Once the vegetables are tender, place into a pot along with the oat milk, water and bouillon cube. Bring to a boil.

  4. Take off the heat, and puree using an immersion blender.

  5. Add in your cayenne, cumin, black pepper, and curry powder if using. Stir to combine. Add in some more salt & pepper to taste, along with some lemon juice. Enjoy!
