Cranberry Peanut Butter Loaf
Moist and delectable while tart and zesty. This easy Cranberry Peanut Butter loaf recipe is the best seasonal dessert, breakfast, or snack!
Recipe Type: Dessert | Serves: 8-10 slices
Ingredients
All-purpose flour: 1 cup
Quick Oats: 1 cup
Cranberries: 1 1/2 cups (fresh or frozen, plus more for the top!)
Baking Soda: 1 tsp
Peanut Butter: 1/2 cup
Honey: 1/4 cup
Lime: juiced and zested
Oat Milk: 1 cup
Pure Vanilla Extract: 1 tsp
Cinnamon: 1/2 tsp
Salt: a pinch
Instructions
In a mixing bowl, combine flour, oats, baking soda and salt, stir to combine.
Add in the peanut butter, honey, vanilla extract, cinnamon, lime juice, lime zest, oat milk and cranberries. Don’t over-mix.
Pour into a pre-greased loaf pan, and add some more cranberries on top.
Place on the center rack in the oven at 350, and bake for about 50 minutes.
Remove from oven, let cool and enjoy!
If you have any allergies, simply sub out the peanut butter for another nut butter, or a seed alternative like sunflower seed butter!
Honey can be subbed out for maple or agave syrup.
