Easy Shepherd’s Pie

Packed with textured vegetable protein, an array of vegetables, and a medley of savoury herbs and spices, it's a simple, vegan twist on the classic dish that's a breeze to prepare.

Ingredients

  • Onion: 1 medium, chopped

  • Carrots: 2 medium, chopped

  • Textured Vegetable Protein: 1 cup

  • Vegetable Bouillon Cube: 1 (or 1/2 cup vegetable broth)

  • Garlic: 2 cloves, minced

  • Soy Sauce: 1 tbsp

  • Potatoes: 3 medium, 4 small

  • Flour: 2 tbsp

  • Peas: 1 cup

  • Balsamic Vinegar: 1 tbsp

  • Oat Milk: 1/4 cup

  • Olive oil: 1 tsp

  • Water: 3/4 cup + 1 cup

  • Fresh Parsley: 1 tbsp, minced

  • Dried Thyme: 2 tsp

  • Dried Rosemary: 2 tsp + 1 tsp

  • Dried Sage: 2 tsp

  • Dried Parsley: 2 tsp

  • Chilli Powder: 1 tsp

  • Cayenne Pepper: 1 tsp

  • Smoked Paprika: 1 tsp

  • Cumin: 1 tsp

  • Garlic Powder: 1/2 tsp

  • Salt: 1 tsp

Instructions

  1. In a pan, heat olive oil on medium heat, then add in chopped onions, carrots, and garlic along with the dried thyme, 2 tsp of rosemary, sage, and dried parsley.

  2. Meanwhile, boil some water. Place dried TVP in a bowl along with the chili powder, cayenne, cumin, smoked paprika and the remaining 1 tsp of rosemary. Add 3/4 cups of the boiled water to hydrate.

  3. Once the onion is translucent, add in the bouillon cube or broth, along with the remaining water and hydrated TVP, and stir.

  4. Bring to a boil, then add the soy sauce and balsamic to the veggie-meat mixture. Lower to medium heat and simmer for about 10 minutes.

  5. In the meantime, chop your potatoes and place them in a pot of boiling water. Boil until potatoes are soft. Drain, mash. then add in oat milk, salt, and garlic powder.

  6. Take the veggie-meat mixture off the heat, and add in the peas. Stir to combine.

  7. Pour the veggie-meat mixture into a casserole dish, then top with the mashed potatoes.

  8. Bake uncovered in the oven at 375, the veggie-meat mixture is bubbling and the potatoes are golden (around 30 minutes).

  9. Take out of the oven, and top with fresh parlsey. Let cool slightly before serving, and enjoy!
