Garlicky Miso Tahini & Broccoli Pasta
This garlicky miso tahini and broccoli pasta takes mac and cheese to a whole new level. Packed with a savoury miso tahini sauce, it's ready in a flash, making it the perfect weeknight dinner. Broccoli gets a boujee upgrade, turning this dish into a flavour explosion.

Ingredients
Dried Pasta: 3-4 cups
Broccoli Crowns: 4, chopped
Unsalted Butter: 6 tbsp
Miso Paste: 2 tbsp
Tahini: 3 tbsp
Nutritional Yeast: 2 tbsp
Garlic: 2 cloves, sliced
Oat Milk: 1/4 cup
Reserved Pasta Water: 1 cup
Salt and pepper: to taste
Lemon Juice: a splash
Red Pepper flakes (optional)
Fresh Parsley (optional)
Cashew Parmesan (optional)
Instructions
Bring a large pot of water to boil. Cook your pasta until al dente.
In the meantime, grab a double boiler or a steamer and small pot, and boil a small amount of water for the bottom. Place your chopped broccoli inside, and steam for about 5-6 minutes.
Make your sauce by combining butter, miso paste, tahini and garlic into another pot on medium low heat. Once all the butter has melted, give it a stir until combined, and add in your oat milk, nutritional yeast and up to 1 cup of reserved pasta water.
By the time it starts boiling, your pasta and broccoli should be cooked. Add in your pasta and broccoli to your sauce and mix until combined. Add some salt and pepper to taste, as well as a splash of lemon juice.
Serve topped with red pepper flakes, fresh parsley and cashew parmesan! Enjoy!
Feel free to swap the butter for olive oil!
If you don’t like spicy, omit the red pepper flakes!
If you can’t find any cashew parmesan at the store, you can make some simply by grinding raw cashews, mixing them with nutritional yeast and a little bit of sea salt!
