Easy Cereal Bars

A healthy cereal protein bar recipe for your little ones! This one is a staple in our household and SO nutritious! Full of protein, dairy, refined sugar, and gluten-free! Suitable for ages 1+.

 

Recipe Type: Snacks | Serves: Makes 16 squares

Ingredients

  • Flax Seed: 1 tbsp, ground + 1 tbsp, whole

  • Puffed Rice Cereal: 2 cups

  • Chia Seed: 1 tbsp

  • Hemp Hearts: 1 tbsp

  • Sunflower Seeds, 2 tbsp, ground

  • Pumpkin Seeds: 2 tbsp, ground

  • Honey: 1 tbsp

  • Protein Powder: 2 tbsp (We use Else Nutrition’s Toddler Omega Plant-Based Complete & Balanced Nutrition)

  • Quick Rolled Oats: 2 tsp

  • Coconut Milk Beverage: 1-2 tbsp

  • Cinnamon: 1 tsp

  • Cocoa Powder: 2 tsp

Instructions

  1. Prepare your flax egg. Mix 1 tbsp of ground flax with 3 tbsp of warm water. Stir and let sit until it develops an egg-like consistency.

  2. Combine cereal, whole flax seed, chia seeds, hemp hearts, ground sunflower seeds, ground pumpkin seeds, protein powder, cinnamon, and honey. Mix together.

  3. Add coconut milk beverage little by little until all the dry ingredients have mixed with the wet ingredients.

  4. Place into a square baking dish lined with parchment paper. Top with cocoa powder and oats.

  5. Freeze until solid (about 30-45 mins).

  6. Take it out, and chop into 16 squares! Enjoy!

Feel free to sub the puffed rice, with puffed quinoa, or any other kind of kid-safe cereal. 
To make this receipe suitable for those under ages 1+, simply omit the honey or add a smooth nut or seed butter in its place!
