Loaded Sweet Potato and Tofu Bowl with Spicy BBQ Drizzle
A hearty mix of tofu, beans, sweet potato, rice, and fresh baby spinach, topped with a spicy BBQ drizzle. This budget-friendly meal is not only filling but also super healthy and bursting with flavor.

Ingredients
Extra Firm Tofu: 1 block, pressed at least 1 hour
Baby Spinach: 6 handfuls
Basmati Rice: 3/4 cup
Sweet Potato: 1 large, chopped
Onion: 1 medium
Corn: 1/2 cup
Black Beans: 1 can
Soy Sauce: 1 tbsp
Hot Sauce: 2 tbsp
Liquid Smoke: 1/4 tsp
Olive Oil: 4 tsp
Vegan Mayonaise: 4 tbsp
BBQ Sauce: 2 tbsp
Fresh Parsley: 1/4 cup, minced + more for garnish
Chilli Powder: 1/4 tsp + 1/4 tsp
Cayenne Pepper: 1/4 tsp
Cumin: 1/4 tsp
Smoked Paprika: 1/4 tsp
Vegeta: 1/2 tsp
Salt: 1/4 tsp
Cane Sugar: a pinch
Cinnamon: a pinch
Instructions
Press your tofu for at least 1 hour to drain any excess liquid in the block.
In the meantime, prepare the tofu marinade by combining 1 tsp olive oil, chilli powder, cayenne, cumin, smoked paprika, liquid smoke, soy sauce and half the hot sauce. Whisk until combined.
Once pressed, chop the tofu into squares, and place into a bowl or silicone bag with the marinade. Mix until evenly coated and marinate for at least 30 minutes.
In a bowl, toss your sweet potatoes with 1 tsp of olive oil, a pinch of cinnamon and cane sugar, 1/4 tsp of chilli powder and salt! Place on a baking dish, and roast in the oven at 350 for about 25 minutes, turning halfway.
After 25 minutes, add your corn, onion and beans to the baking dish with the sweet potato with an additional tsp of olive oil. Toss and place in the oven for an additional 15 minutes.
Meanwhile, cook your rice. Once cooked, add in your fresh parsley and vegeta, and stir until combined.
Prepare your spicy bbq drizzle by combining the mayo, 1 tbsp of bbq sauce and the other half of the hot sauce. Whisk until smooth.
In a pan, heat 1 tsp of olive oil on medium heat. Add in your tofu and saute until the outsides become crispy. Take off the heat, add in the other half of the bbq sauce and stir until evenly coated.
Assemble your bowl by adding in your parsley rice, followed by a handful of spinach, sweet potato-bean mixture, and tofu. Drizzle with the spicy bbq sauce and top with some additional fresh parsley. Enjoy!
Feel free to sub the spinach for kale or lettuce.
For a spicier drizzle, add more hot sauce.
