Ingredients

  • Diced Tomatoes: 2 cans (28oz)

  • Pinto Beans: 1 can (19oz)

  • Chickpeas: 1 can (19oz)

  • Kidney Beans: 1 can (19oz)

  • Black Beans: 1 can (19oz)

  • Lentils: 1 can (19oz)

  • Textured Vegetable Protein: 1 cup dehydrated (about 2 cups pre-made)

  • Vegetable Bouillon Cube: 1

  • Carrots: 2 medium, chopped

  • Onion: 1 small, chopped

  • Cumin: 1 tsp

  • Chilli Powder: 1 tbsp

  • Smoked Paprika: 1 tsp

  • Basil: 1/2 tsp

  • Oregano: 1/2 tsp

  • Thyme: 1/2 tsp

  • Bay Leaf: 3 leaves

  • Salt and Pepper: to taste

Instructions

  1. Put all ingredients into a very large pot.

  2. Fill with water and bring to a boil.

  3. Lower to a simmer, and cook for at least 1 hour. (the longer, the better!) Enjoy!
