Quinoa, Bean & Lentil Soup
With a wholesome mix of quinoa, beans, lentils, and vegetables, it's the ultimate comfort food that's simple to make and budget-friendly, making each spoonful a warm and satisfying delight.

Ingredients
Quinoa: 1 cup
Pinto Beans: 1 can (19oz)
Lentils: 1 can (19oz)
Onion: 1 medium, chopped
Carrots: 2 medium, chopped
Peas: 1/2 cup
Vegetable Bouillon Cube: 1
Garlic Powder: 1 tsp
Dried Rosemary: 2 tsp
Dried Parsley: 2 tsp
Bay Leaf: 1
Chilli Powder: 2 tsp
Cayenne: 1 tsp
Cumin: 3 tsp
Smoked Paprika: 2 tsp
Olive Oil: 1 tsp
Water: 4 cups
Salt & Pepper: to taste
Instructions
Chop up carrots and onions, and place into a pot with olive oil on medium heat. Add in half of the herbs and spices except for the bay leaf and give it a stir. Saute until the onion is translucent.
Add in your lentils, beans, bouillon cube, bay leaf, and half of the water. Stir to combine.
Add in your quinoa, the remaining herbs and spices, salt & pepper, and the rest of the water. Bring to a boil.
Lower to a simmer, and cook until quinoa is done.
Add in your peas, and stir to combine. Enjoy!

Feel free to adjust the herbs and spices to your liking, but I find that the cumin really makes this recipe pop!
