Cranberry Apple Crisp
A delightful blend of apples, cranberries, and oats. Perfect for Christmas, this easy-to-prepare dessert adds a festive touch to the classic apple crisp, bringing warmth and sweetness, with a hint of something tart, to your holiday celebrations.

Filling
Apples: 6-8, sliced (depending on size of apples)
Cranberries: 1 cup, fresh or frozen
Honey or Maple Syrup: 1/2 cup
Flour: 2 tbsp
Orange Juice: 1/4 cup
Vanilla Extract: 1 tsp
Cinnamon: 1 tsp
Star anise: for garnish
Cinnamon Sticks: for garnish
Topping
Flour: 1/2 cup
Rolled Oats: 1/2 cup
Cane Sugar: 1/2 cup
Cinnamon: 1 tsp
Nutmeg: 1/2 tsp
Salt: a pinch
Olive Oil or Melted Butter: 2 tbsp
Instructions
Preheat your oven to 350, and lightly grease your pie pan.
Combine the filling ingredients in a bowl, and toss to combine. Transfer into greased pie pan.
In another bowl, combine topping ingredients. Mix together with 2 forks until it looks like coarse crumbs. Sprinkle on top of filling and pat down gently if needed.
Bake until top is golden brown, around 35 mins and the filling is bubbling.
Garnish with star anise and cinnamon sticks. Serve warm and enjoy!
I love to use a variety of apples, I find it gives the best flavour!
Serves well with a scoop of vegan vanilla bean ice cream!
