Ingredients
Carrots: 2 medium, chopped
Onion: 1 medium, chopped
Dried White Navy Beans: 1/2 cup (pre-soaked)
Pinto Beans: 1 can (19oz)
Red Kidney Beans: 1 can (19oz)
Black Beans: 1 can (19oz)
Chickpeas: 1 can (19oz)
Lentils: 1 can (19oz)
Garlic: 2 cloves, sliced
Diced Tomatoes: 2 cans (28oz)
Parsley: 1/4 cup, chopped
Vegetable Bouillon Cube: 1
Cumin: 1 tsp
Chilli Powder: 1 tbsp
Smoked Paprika: 1 tsp
Basil: 1/2 tsp
Oregano: 1/2 tsp
Thyme: 1/2 tsp
Bay Leaf: 3 leaves
Salt and Pepper: to taste
Instructions
Put all ingredients into a very large pot.
Fill with water and bring to a boil.
Lower to a simmer, and cook until white beans have softened!
Feel free to swap the dried beans with a can of white beans for a simpler, quicker meal!
