Easy Bean & Lentil Chilli

Ingredients

  • Carrots: 2 medium, chopped

  • Onion: 1 medium, chopped

  • Dried White Navy Beans: 1/2 cup (pre-soaked)

  • Pinto Beans: 1 can (19oz)

  • Red Kidney Beans: 1 can (19oz)

  • Black Beans: 1 can (19oz)

  • Chickpeas: 1 can (19oz)

  • Lentils: 1 can (19oz)

  • Garlic: 2 cloves, sliced

  • Diced Tomatoes: 2 cans (28oz)

  • Parsley: 1/4 cup, chopped

  • Vegetable Bouillon Cube: 1

  • Cumin: 1 tsp

  • Chilli Powder: 1 tbsp

  • Smoked Paprika: 1 tsp

  • Basil: 1/2 tsp

  • Oregano: 1/2 tsp

  • Thyme: 1/2 tsp

  • Bay Leaf: 3 leaves

  • Salt and Pepper: to taste

Instructions

  1. Put all ingredients into a very large pot.

  2. Fill with water and bring to a boil.

  3. Lower to a simmer, and cook until white beans have softened!

Feel free to swap the dried beans with a can of white beans for a simpler, quicker meal!
